Lentils & Carrot Salad

Makes 4 Servings


For the White Wine Vinaigrette:
½ cup NHF White Wine Vinegar
1 cup NHF Extra Virgin Olive Oil
2 tablespoons Dijon mustard
1 teaspoon crushed red pepper
2 tablespoons agave syrup
1 teaspoon chopped rosemary
1 teaspoon chopped thyme
1 tablespoon chopped garlic
NHF Kosher Salt, as needed
NHF Course Ground Black Pepper, as needed

For the Lentil Salad
1 lbs. Dry French Lentils
1 large red onion, diced finely
1 large orange carrot, diced small
1 large yellow carrot, diced small
2 tablespoons NHF Extra Virgin Olive Oil
NHF Kosher Salt, as needed
NHF Course Ground Black Pepper, as needed
2 tablespoons cilantro, chopped


For the White Wine Vinaigrette:

  1. Begin by combining all ingredients, except olive oil into a blender bowl.
  2. Place blender bowl on base, secure top and turn on low.
  3. Allow ingredients to blend for 15 seconds.
  4. Slowly drizzle in olive oil until completely consumed.
  5. Taste. Adjust seasoning with salt and pepper and set aside.

For the Lentil Salad:

  1. Begin by running lentils under cold water in a bowl to clean them. Strain with a colander and discard water.
  2. Place them into a large stock pot and cover in 2 inches of cold water. Place pot over high heat and bring to a simmer.
  3. Allow cooking until lentils are soft, but firm to the tooth (al dente) – follow the package instructions.
  4. Remove from heat. Place into a colander and strain and run under cold water until lentils are completely cooled.
  5. Allow lentils to completely dry in colander, transfer to large mixing bowl, and set aside.
  6. In large sauté pan heated to medium high heat, add the olive oil and cook onions and carrots until al dente (tender with a bite to it). Remove from the pan and set aside.
  7. Combine all ingredients in large mixing bowl, add the cilantro and the dressing and gently stir.
  8. Taste. Adjust seasoning as needed and allow to marinate for 1 hour before serving.

*This salad can be served as a wonderful side dish at any meal. Lentils are an excellent source of protein and have many health benefits in addition to being absolutely delicious!
